1990 Grand Marquis running hot, why?

I have replaced the fan motor clutch, thermostat, heater core, instrument cluster and flushed the radiator. Weird thing is as soon as you switch the A/C on the temp. gauge jumps up from normal to hot, and consequently when you switch it off it drops down immediately. Can't get to the bottom of this, any help would be greatly appreciated.
